Vegetarian Samosas

Ingredients:

  • 600gm potatoes, cubed and steamed
  • 125gm fresh or frozen peas
  • 1 onion, chopped
  • 1/4 cup tomato paste
  • 1/2 teaspoon crushed garlic
  • 3/4 tspn mustard seeds
  • 3/4 tspn cumin seeds
  • 3/4 tspn curry powder
  • 1/2 teaspoon turmeric powder
  • 3/4 teaspoon cumin powder
  • 3/4 teaspoon coriander powder
  • dash chilli powder
  • 1 packet filo pastry
  • serves 4 (2 samosas each)

Directions:

  1. Saute mustard seeds and cumin seeds in a non-stick pan. Allow them to finish popping before adding the onion, garlic and all other spices. Cook stirring often for about 5 minutes then switch off.
  2. Add cooked potatoes, peas, tomato paste and mix well.
  3. Take one sheet of filo pastry and fold three times.
  4. Place a tablespoon of mixture on bottom left hand corner of pastry and fold bottom right hand corner over the filling. Now fold again lifting the mixture and pastry diagonally to the right, making a small triangle. Keep folding diagonally towards the side of the pastry until you reach the end of the sheet. You should now have a neat little triangular parcel.
  5. Bake in a hot oven 200-220C for 10-15 minutes until brown on top.
  6. Serve with mango chutney and a large salad for a main meal.
