Tofu Lasagne

Ingredient:

  • 8 lasagne sheets (cooked according todirections)
  • 1/2 medium onion chopped
  • 2 cloves garlic
  • 500gm can chopped tomatoes
  • 1 bottle Provisto Sugo
  • 2 teaspoons fresh chopped basil
  • 2 teaspoons fresh chopped oregano
  • 1 cup cooked spinach (fresh or frozen)
  • 500gm soft tofu, mashed
  • 1/2 teaspoon nutmeg
  • freshly ground black pepper
  • sprinkle of parmesan
  • serves 6

Directions:

  1. Saute onion and garlic. Stir in tomatoes, Provisto Sugo and herbs. Simmer gently for 1/2 hour.
  2. Mix spinach and nutmeg into tofu. Place a layer of noodles in a large casserole and pour tomato sauce over noodles.
  3. Add a layer of tofu mixture. Repeat layering finishing with a tofu layer.
