Spinach Quiche
Ingredients:
Crust:
- 2 cups cooked brown rice
- 1/2 cup chopped onion
- 1 tablespoon chopped parsley
- 1 egg lightly beaten
- 1 medium tomato, finely sliced
Filling:
- 2 eggs
- cup non-fat yoghurt
- 2 cups cooked spinach
- 1 medium tomato, sliced finely
- 60gms ricotta cheese
- serves 4
Directions:
- Preheat oven to 180C.
- Combine rice, onion, egg andparsley.
- Lightly spray 25cm pie plate witholive oil cooking spray. Press rice mixture into base and sides.
- Beat eggs with yoghurt and ricotta cheese. Add spinach and stir well.
- Pour mixture into rice shell.
- Arrange tomato circles decoratively over top.
- Sprinkle with black pepper and dill.
- Bake about 35 minutes, or until firm and golden brown.
