Spinach Quiche

Ingredients:

Crust:

  • 2 cups cooked brown rice
  • 1/2 cup chopped onion
  • 1 tablespoon chopped parsley
  • 1 egg lightly beaten
  • 1 medium tomato, finely sliced

Filling:

  • 2 eggs
  • cup non-fat yoghurt
  • 2 cups cooked spinach
  • 1 medium tomato, sliced finely
  • 60gms ricotta cheese
  • serves 4

Directions:

  • Preheat oven to 180C.
  • Combine rice, onion, egg andparsley.
  • Lightly spray 25cm pie plate witholive oil cooking spray. Press rice mixture into base and sides.
  • Beat eggs with yoghurt and ricotta cheese. Add spinach and stir well.
  • Pour mixture into rice shell.
  • Arrange tomato circles decoratively over top.
  • Sprinkle with black pepper and dill.
  • Bake about 35 minutes, or until firm and golden brown.
