Spinach Lasagne

Ingredients:

  • 2 sheets mountain bread
  • 500gms frozen leaf spinach
  • 250gms ricotta cheese
  • 1 bottle “Provisto Sugo” tomato sauce (or similar)
  • sprinkle of nutmeg
  • 2 tablespoons cornflour
  • 1 litre skim milk
  • 2 teaspoons parmesan cheese
  • serves 4

Directions:

  1. Cut mountain bread sheets in half.
  2. Microwave spinach on “HIGH” for seven minutes. Sprinkle with nutmeg and mix in well.
  3. Place one sheet of mountain bread in an oblong dish. Spread one third of tomato sauce over bread. Spread one third spinach and one third of ricotta. Cover with another slice of mountain bread. Layer in this manner, finishing with a layer of bread.
  4. Heat milk in saucepan. Combine cornflour with a little water and stir till smooth. Add to milk slowly, stirring constantly until thick.
  5. Pour over lasagne, sprinkle with parmesan and bake at 180C until bubbling and golden brown.
