Sesame Sprout Salad
Ingredients:
- 2 medium carrots, peeled and cut into fine julienne strips
- 1 green capsicum, cored and cut into fine julienne strips
- 2 teaspoons sesame seeds
- 2 cups bean sprouts or mung beans
- 1 small can unsweetened pineapple pieces
- 200gms tofu, cut into small cubes
- 1 tablespoon finely chopped cardamom
- 1 teaspoon grated fresh ginger
- serves 2
Directions:
- Combine all ingredients except pineapple juice and tofu. Toss well, then gently fold through tofu.
- Mix pineapple juice, soy sauce and ginger. Pour over salad.
