Sesame Sprout Salad

Ingredients:

  • 2 medium carrots, peeled and cut into fine julienne strips
  • 1 green capsicum, cored and cut into fine julienne strips
  • 2 teaspoons sesame seeds
  • 2 cups bean sprouts or mung beans
  • 1 small can unsweetened pineapple pieces
  • 200gms tofu, cut into small cubes
  • 1 tablespoon finely chopped cardamom
  • 1 teaspoon grated fresh ginger
  • serves 2

Directions:

  1. Combine all ingredients except pineapple juice and tofu. Toss well, then gently fold through tofu.
  2. Mix pineapple juice, soy sauce and ginger. Pour over salad.
