Ricotta and Spinach Slice
Ingredients:
- 1 cup brown rice
- 2 bunches spinach
- 1 medium onion, chopped
- 1 cup ricotta cheese
- 3 eggs lightly beaten
- 1/2 cup skim milk
- 1/2 tablespoon grated parmesan
- serves 4
Directions:
- Line a 23cm square slab pan with foil. Add rice to large pan of boiling water, boil, uncovered, until just tender, drain.
- Cover spinach leaves with boiling water, stand 30 seconds, drain.Squeeze excess water from spinach, chop spinach finely.
- Add onion and garlic to pan, cook until onion is soft.
- Combine spinach, rice, onion mixture, ricotta cheese, eggs and milk in bowl, mix well.
- Spoon mixture into prepared pan, smooth top, sprinkle with parmesan cheese.
- Bake in moderate oven about 30 minutes, or until firm. If desired, place under hot grill until top is lightly browned.
