Ricotta and Spinach Slice

Ingredients:

  • 1 cup brown rice
  • 2 bunches spinach
  • 1 medium onion, chopped
  • 1 cup ricotta cheese
  • 3 eggs lightly beaten
  • 1/2 cup skim milk
  • 1/2 tablespoon grated parmesan
  • serves 4

Directions:

  1. Line a 23cm square slab pan with foil. Add rice to large pan of boiling water, boil, uncovered, until just tender, drain.
  2. Cover spinach leaves with boiling water, stand 30 seconds, drain.Squeeze excess water from spinach, chop spinach finely.
  3. Add onion and garlic to pan, cook until onion is soft.
  4. Combine spinach, rice, onion mixture, ricotta cheese, eggs and milk in bowl, mix well.
  5. Spoon mixture into prepared pan, smooth top, sprinkle with parmesan cheese.
  6. Bake in moderate oven about 30 minutes, or until firm. If desired, place under hot grill until top is lightly browned.
