Potato Omelette Slice

Ingredients:

  1. 1 large onion sliced
  2. 1 clove garlic, crushed
  3. 1 small red pepper, chopped
  4. 130gm can corn kernels, drained
  5. 2 teaspoons chopped oregano
  6. 2 medium potatoes, peeled & sliced
  7. 2 eggs lightly beaten
  8. 2 egg whites, lightly beaten
  9. 1/2 cup skim milk
  10. 2 teaspoons chopped fresh thyme
  11. 1/2 cup crumbled ricotta cheese
  12. serves 2

Directions:

  1. Line a deep 19cm square cake tin with baking paper.
  2. Saute onion, garlic and pepper in non stick pan, cook, stirring until onion is soft.
  3. Combine onion mixture with corn and oregano.
  4. Layer half the potatoes over base of pan.
  5. Top with onion mixture, then the rest of the potatoes.
  6. Pour the combined egg and egg white and milk over the top. Sprinkle with thyme and cheese.
  7. Bake uncovered in oven about 1 hour, or until potatoes are cooked and top is lightly browned.
