Potato Omelette Slice
Ingredients:
- 1 large onion sliced
- 1 clove garlic, crushed
- 1 small red pepper, chopped
- 130gm can corn kernels, drained
- 2 teaspoons chopped oregano
- 2 medium potatoes, peeled & sliced
- 2 eggs lightly beaten
- 2 egg whites, lightly beaten
- 1/2 cup skim milk
- 2 teaspoons chopped fresh thyme
- 1/2 cup crumbled ricotta cheese
- serves 2
Directions:
- Line a deep 19cm square cake tin with baking paper.
- Saute onion, garlic and pepper in non stick pan, cook, stirring until onion is soft.
- Combine onion mixture with corn and oregano.
- Layer half the potatoes over base of pan.
- Top with onion mixture, then the rest of the potatoes.
- Pour the combined egg and egg white and milk over the top. Sprinkle with thyme and cheese.
- Bake uncovered in oven about 1 hour, or until potatoes are cooked and top is lightly browned.
