Lentil Patties with Eggplant Sauce

Ingredients:

  • 2 medium old potatoes chopped
  • 1 can Sanitarium savoury lentils drained
  • 1 small green and 1 small red capsicum finely chopped
  • 1 medium onion finely chopped
  • 2 cloves garlic crushed
  • 1 tablespoon pine nuts finely chopped
  • 1 ½ cups stale breadcrumbs
  • 1 teaspoon chopped fresh parsley
  • serves 4

Directions:

  1. Saute capsicum, onion, garlic and pine nuts.
  2. Steam potatoes, mash. Lightly blend all ingredients. Mix in breadcrumbs.
  3. Shape into patties. Oven bake until golden, turning once.
  4. To prepare sauce, cut eggplant lengthways place on baking dish lightly sprayed with olive oil, outside down, bake for 45 minutes or until soft. Scoop out flesh and discard skin. Blend all ingredients.
