Lentil Casserole

Ingredients:

  • 1 cup diced red onion
  • 500gms drained cooked lentils(reserve 2 cups cooking liquid)
  • 1 large can whole peeled tomatoes, chopped
  • 1 teaspoon chilli powder
  • 1/2 tablespoon ground cumin
  • 1 bay leaf
  • 2 large carrots, cubed
  • 1 teaspoon ground coriander
  • 1 clove garlic
  • 2 cups vegetable stock
  • serves 4

Directions:

  1. Combine all ingredients in stock pot. Bring to boil and simmer for one hour.
  2. Remove bay leaf before serving. Serve with rice.
