Lentil Casserole
Ingredients:
- 1 cup diced red onion
- 500gms drained cooked lentils(reserve 2 cups cooking liquid)
- 1 large can whole peeled tomatoes, chopped
- 1 teaspoon chilli powder
- 1/2 tablespoon ground cumin
- 1 bay leaf
- 2 large carrots, cubed
- 1 teaspoon ground coriander
- 1 clove garlic
- 2 cups vegetable stock
- serves 4
Directions:
- Combine all ingredients in stock pot. Bring to boil and simmer for one hour.
- Remove bay leaf before serving. Serve with rice.
