Hungarian Lecso

Ingredients:

  • 2 green capsicums
  • 2 red capsicums
  • 1 large onion, sliced very finely
  • 2 tablespoons red Hungarian paprika
  • 1 clove garlic, crushed
  • 3 large tomatoes, peeled and seeded and cut in quarters
  • 2 eggs, well beaten
  • serves 4

Directions:

  1. Core capsicums and slice finely into strips.
  2. Dry fry the onion rings and add capsicum. Add paprika and stir well.
  3. Add tomatoes, and heat through. Add the beaten eggs and stir well until just cooked.
  4. Serve on bed of rice or with a large baked potato.
