Genoise Rice Salad

Ingredients:

  • 1 cup long grain brown rice (cooked)
  • 4 medium zucchini
  • 1 tspn dried basil
  • 1 tspn dried oregano
  • 4 cups lettuce
  • 2 cups spinach, finely chopped
  • 1 cup alfalfa sprouts

Dressings:

  • 1 tablespoon Worcestershire sauce
  • 1 clove garlic
  • 2 tspns lemon juice
  • 2 tablespoons wine vinegar
  • 1 tablespoon mixed herbs
  • black pepper
  • serves 2

Directions:

  1. Slice zucchini and toss in wok with basil and oregano. Set aside to cool.
  2. Wash and dry lettuce and break into bite size pieces. Combine in large bowl with spinach, sprouts, zucchini and rice.
  3. Combine dressing in jar, shake well and pour dressing over salad.
