Genoise Rice Salad
Ingredients:
- 1 cup long grain brown rice (cooked)
- 4 medium zucchini
- 1 tspn dried basil
- 1 tspn dried oregano
- 4 cups lettuce
- 2 cups spinach, finely chopped
- 1 cup alfalfa sprouts
Dressings:
- 1 tablespoon Worcestershire sauce
- 1 clove garlic
- 2 tspns lemon juice
- 2 tablespoons wine vinegar
- 1 tablespoon mixed herbs
- black pepper
- serves 2
Directions:
- Slice zucchini and toss in wok with basil and oregano. Set aside to cool.
- Wash and dry lettuce and break into bite size pieces. Combine in large bowl with spinach, sprouts, zucchini and rice.
- Combine dressing in jar, shake well and pour dressing over salad.
