Curried Lima Beans
Ingredients:
- 3 tablespoons chicken stock
- 1 tablespoon chopped shallots
- 1 tablespoon chopped chives
- 1 clove garlic, chopped
- 1/4 - 1/2 teaspoon curry powder
- 1/4 teaspoon turmeric
- 1/2 cup diced cauliflower
- 1 cup cooked lima beans
- 1/2 cup mung bean sprouts
- 2 tablespoons fresh chopped parsley
- 1 teaspoon cornflour
- serves 1
Directions:
- Cook shallots, chives, garlic and curry powder in chicken stock till soft.
- Add turmeric and cauliflower and simmer further 10 minutes.
- Add lima beans, sprouts, parsley and heat through for a few minutes, then add cornflour and stir till thickens.
