Curried Lima Beans

Ingredients:

  • 3 tablespoons chicken stock
  • 1 tablespoon chopped shallots
  • 1 tablespoon chopped chives
  • 1 clove garlic, chopped
  • 1/4 - 1/2 teaspoon curry powder
  • 1/4 teaspoon turmeric
  • 1/2 cup diced cauliflower
  • 1 cup cooked lima beans
  • 1/2 cup mung bean sprouts
  • 2 tablespoons fresh chopped parsley
  • 1 teaspoon cornflour
  • serves 1

Directions:

  1. Cook shallots, chives, garlic and curry powder in chicken stock till soft.
  2. Add turmeric and cauliflower and simmer further 10 minutes.
  3. Add lima beans, sprouts, parsley and heat through for a few minutes, then add cornflour and stir till thickens.
