Country Style Red Capsicum

Ingredients:

  • 4 large red peppers
  • 1 green pepper, finely chopped
  • 1 clove garlic, crushed
  • 1 small onion, chopped
  • 1/2 cup frozen mixed vegetables
  • 1 cup cooked brown rice
  • 1/2 teaspoon mixed herbs
  • 2 tablespoons ricotta cheese
  • serves 4

Directions:

  1. Wash red peppers and microwave on HIGH for 3 minutes or until tender. Cut off tops of pepper (keep aside), scoop out seeds. Keep peppers warm.
  2. Dry fry onion and garlic, add green pepper, herbs and par cooked frozen vegetables. Add brown rice.
  3. Pack evenly into pepper shells and sprinkle ricotta cheese on top of vegetables.
  4. Place on an oven tray and bake at 200C until cheese is browned. Replace “lid” and serve with a large green salad.
