Leek and Tomato Soup

Ingredients

  • 3 leeks washed well, finely chopped
  • 5 cups homemade chicken or vegetable stock (see beginning of this section)
  • 1 kg tomatoes (seeded, skinned and chopped)
  • 1/2 teaspoon lemon pepper
  • 1 teaspoon chopped fresh basil
  • serves 4

Directions

  1. Place chopped leeks in saucepan and cover with chicken stock.
  2. Bring to boil. Cook 5 minutes then add tomatoes & basil.
  3. Simmer until tomatoes are tender.
