Tom Yum Soup

Ingredients

  • 12 green prawns
  • 1 tablespoon lemon juice
  • 2 Tom Yum cubes (available from Asian grocer, dissolved in 4 cups water)
  • Garnish: 4 spring onions, coriander leaves, 1 red chilli sliced and seeded
  • serves 4

directions

  1. Shell, remove heads and devein prawns.
  2. Heat stock and bring to boil.
  3. Add prawns. Cook 3-4 minutes (don’t over cook them as they toughen).
  4. Add lemon juice. Serve with garnish.
