Minestrone Soup

Ingredients

  • 1 leek
  • 2-3 sticks celery
  • 1 onion
  • 3 zucchinis
  • 1 carrot
  • 1/2 small cabbage
  • 2 teaspoons chopped parsley
  • 3 cloves garlic
  • 1 teaspoon chopped rosemary
  • pepper and salt to taste
  • 3 teaspoons tomato paste
  • 1 tin 440gms four bean mix
  • 1/2 cup noodles (can be added separately)
  • 2 teaspoons Master Foods bacon bits
  • serves 6

Directions

  • Drain beans, dice leeks, carrots, zucchinis, celery and onion. Shred cabbage and chop herbs. Dilute tomato paste with a little water.
  • Dry fry garlic, onion, celery, carrot, rosemary and bacon bits, and gently fry for 8-10 minutes.
  • Add diluted tomato paste, leek, cabbage, zucchinis, basil, parsley, beans and bean tin of water.
  • Cook approximately 30 minutes.
  • Add cooked noodles. A little more liquid can be added if required.
