Lentil Soup

Ingredients

  • 375gms green or red lentils
  • 2 medium onions, sliced
  • 2 carrots, sliced
  • 2 celery stalks, with leaves
  • 2 cloves garlic
  • 1 tablespoon parsley
  • 400 gms Italian tomatoes
  • 10-12 cups vegetable stock (see above) freshly ground pepper serves 4

Directions

  • Wash lentils and place in large saucepan. Add all ingredients except pepper.
  • Bring to boil, cover and reduce heat and simmer 1 1/2 hours.
  • Add more water if soup becomes too thick.
  • When cooked, add pepper to taste. Top with a dollop of non-fat yoghurt.
