Lentil Soup
Ingredients
- 375gms green or red lentils
- 2 medium onions, sliced
- 2 carrots, sliced
- 2 celery stalks, with leaves
- 2 cloves garlic
- 1 tablespoon parsley
- 400 gms Italian tomatoes
- 10-12 cups vegetable stock (see above) freshly ground pepper serves 4
Directions
- Wash lentils and place in large saucepan. Add all ingredients except pepper.
- Bring to boil, cover and reduce heat and simmer 1 1/2 hours.
- Add more water if soup becomes too thick.
- When cooked, add pepper to taste. Top with a dollop of non-fat yoghurt.
