Gazpacho Soup

Ingredients

  • 1 cucumber, peeled and seeded and chopped
  • 4 tomatoes, skinned and chopped
  • 2 onions, chopped
  • 2 cloves garlic
  • 3 cups water
  • 1 green capsicum
  • chopped
  • 4 tablespoons apple cider vinegar
  • 1 cup fresh breadcrumbs
  • serves 4

Directions

  1. Combine all ingredients in food processor until smooth.
  2. Refrigerate at least two hours and serve well chilled.
