Crab Bisque

Ingredients

  • 1/2 small red capsicum, finely chopped
  • 1 small onion, finely chopped
  • 3 tablespoons flour
  • 1 1/2 cups chicken stock
  • pinch cayenne
  • 2 cups skim milk or water
  • 250gms tin crab meat
  • serves 4

Directions

  1. Saute pepper and onion in a non-stick pan until tender. Add flour.
  2. Remove pan from heat. Add stock, stir well, reduce heat and simmer 5 minutes. Season with cayenne.
  3. Add milk and undrained crab meat.
  4. Simmer 5 minutes. Do not boil.
