Crab Bisque
Ingredients
- 1/2 small red capsicum, finely chopped
- 1 small onion, finely chopped
- 3 tablespoons flour
- 1 1/2 cups chicken stock
- pinch cayenne
- 2 cups skim milk or water
- 250gms tin crab meat
- serves 4
Directions
- Saute pepper and onion in a non-stick pan until tender. Add flour.
- Remove pan from heat. Add stock, stir well, reduce heat and simmer 5 minutes. Season with cayenne.
- Add milk and undrained crab meat.
- Simmer 5 minutes. Do not boil.
