Chilled Cantaloupe Soup
Ingredients
- 1 large cantaloupe
- 2 teaspoons lemon juice, 1/2 cup hot water, 6 chives, finely chopped
- freshly ground black pepper
- orange essence (if desired)
- serves 2
Directions
- Peel, seed and cube cantaloupe. Process in blender and pour into a bowl.
- Combine water with lemon juice, nutmeg, orange essence and black pepper. Add to cantaloupe puree. Chill several hours.
- Sprinkle with finely chopped chives & a sprinkle of nutmeg.
