Chilled Cantaloupe Soup

Ingredients

  • 1 large cantaloupe
  • 2 teaspoons lemon juice, 1/2 cup hot water, 6 chives, finely chopped
  • freshly ground black pepper
  • orange essence (if desired)
  • serves 2

Directions

  1. Peel, seed and cube cantaloupe. Process in blender and pour into a bowl.
  2. Combine water with lemon juice, nutmeg, orange essence and black pepper. Add to cantaloupe puree. Chill several hours.
  3. Sprinkle with finely chopped chives & a sprinkle of nutmeg.
