Coleslaw with Yoghurt Dressing
Ingredients
- 3 cups shredded green cabbage
- 1 cup shredded red cabbage
- 1 cup grated carrot
- 1 cup celery, cut on diagonal
- 3 tablespoons chopped green onion
- 3 tablespoons chopped parsley
- 3 tablespoons diced red and green capsicum
- 1 clove garlic, crushed
- freshly ground black pepper
- serves 4
Dressings
- 1/2 cup low fat yoghurt
- 1 teaspoon raspberry or balsamic vinegar
Directions
- Combine salad ingredients in a large bowl. Mix yoghurt with vinegar in a small bowl and pour over.
- Toss until well combined.
