Stuffed Mushrooms

Ingredients

  • 4 large mushrooms
  • 1 cup spinach, cooked and drained
  • 2 Ryvita biscuits, crushed
  • 1 tablespoon onion, chopped finely
  • 2 tablespoons water
  • 1/4 teaspoon sage
  • 1 tablespoon ricotta cheese
  • serves 1

Directions

  1. Remove mushroom stems and chop. Place caps in shallow baking dish.
  2. Combine stems with other ingredients to make stuffing.
  3. Fill caps.
  4. Bake at 200C for 15-20 minutes. Serve as a vegetable, with fish, or meat or chicken or as a lunch dish with salad.
