Stuffed Mushrooms
Ingredients
- 4 large mushrooms
- 1 cup spinach, cooked and drained
- 2 Ryvita biscuits, crushed
- 1 tablespoon onion, chopped finely
- 2 tablespoons water
- 1/4 teaspoon sage
- 1 tablespoon ricotta cheese
- serves 1
Directions
- Remove mushroom stems and chop. Place caps in shallow baking dish.
- Combine stems with other ingredients to make stuffing.
- Fill caps.
- Bake at 200C for 15-20 minutes. Serve as a vegetable, with fish, or meat or chicken or as a lunch dish with salad.
