Vegetables Firenze

Ingredients

  • 1 large tin tomatoes
  • 1 eggplant, cubed, salted and rinsed after 15 minutes
  • 1 carrot cut into 5cm lengths and quartered lengthwise
  • 1 zucchini as above
  • 1/4 cabbage, shredded
  • 1 cup broccoli florets
  • 1 cup cauliflower florets
  • 1 clove garlic, crushed
  • 1 onion, sliced
  • black pepper
  • basil or any other fresh
  • herb to garnish
  • 2 teaspoons mixed herbs
  • serves 4

Directions

  1. Dry fry onion and garlic. Add tomatoes, vegetables and herbs. Cook with lid on for 5
    minutes.
  2. Remove lid to reduce liquid. Add fresh herbs and simmer until vegetables are tender.
