Traditional Swedish Cucumber Ring
Ingredients
- 240gms low fat yoghurt
- 240gms ricotta cheese
- 1 large cucumber
- 3 tablespoons spring onion chopped
- 3 envelopes unflavoured gelatine
- 1/2 cup hot water
Dressings
- Combine all ingredients and stir till smooth.
- 200gms low fat yoghurt
- 1/2 medium green capsicum, diced
- 1 tablespoon grated carrot
- 2 teaspoons lemon juice
- 1 teaspoon chopped chives or dill
- freshly ground black pepper
Directions
- Dissolve gelatine in hot water. Combine yoghurt, ricotta cheese, and roughly chopped cucumber, in blender.
- Blend till smooth. Fold in spring onion and gelatine mixture. Pour into a ring mould and set in refrigerator.
- To Serve
- 102 Un-mould onto platter, fill centre with sliced cucumber and diced spring onion and serve with dressing. Serves 4.
