Traditional Swedish Cucumber Ring

Ingredients

  • 240gms low fat yoghurt
  • 240gms ricotta cheese
  • 1 large cucumber
  • 3 tablespoons spring onion chopped
  • 3 envelopes unflavoured gelatine
  • 1/2 cup hot water

Dressings

  • Combine all ingredients and stir till smooth.
  • 200gms low fat yoghurt
  • 1/2 medium green capsicum, diced
  • 1 tablespoon grated carrot
  • 2 teaspoons lemon juice
  • 1 teaspoon chopped chives or dill
  • freshly ground black pepper

Directions

  1. Dissolve gelatine in hot water. Combine yoghurt, ricotta cheese, and roughly chopped cucumber, in blender.
  2. Blend till smooth. Fold in spring onion and gelatine mixture. Pour into a ring mould and set in refrigerator.
  3. To Serve
  4. 102 Un-mould onto platter, fill centre with sliced cucumber and diced spring onion and serve with dressing. Serves 4.
