Cauliflower and Broccoli

Ingredients

  • 1/2 medium cauliflower broken into florets
  • 400gm broccoli broken into florets
  • 1 small onion, finely chopped
  • 1 tablespoon plain flour
  • 1/4 cup chicken stock
  • 1 tablespoon white wine vinegar
  • 1/2 cup low fat natural yoghurt
  • 2 tablespoons chopped
  • fresh parsley
  • serves 4

Directions

  1. Steam or microwave cauliflower and broccoli until just tender. Keep warm.
  2. Dry fry onion and add 1 tablespoon water, stirring until onion has softened - do not allow to brown.
     
    Remove pan from heat, stir in flour, return to heat and cook, stirring for 1 minute. Remove from heat, gradually stir in chicken stock and vinegar, being careful to avoid lumps.
  3. Return to heat, cook, stirring until mixture has boiled and thickened. Stir in yoghurt and chopped parsley - reheat gently but do not allow to boil.
  4. Spoon the hot sauce over the vegetables and serve.
