Cauliflower and Broccoli
Ingredients
- 1/2 medium cauliflower broken into florets
- 400gm broccoli broken into florets
- 1 small onion, finely chopped
- 1 tablespoon plain flour
- 1/4 cup chicken stock
- 1 tablespoon white wine vinegar
- 1/2 cup low fat natural yoghurt
- 2 tablespoons chopped
- fresh parsley
- serves 4
Directions
- Steam or microwave cauliflower and broccoli until just tender. Keep warm.
- Dry fry onion and add 1 tablespoon water, stirring until onion has softened - do not allow to brown.
Remove pan from heat, stir in flour, return to heat and cook, stirring for 1 minute. Remove from heat, gradually stir in chicken stock and vinegar, being careful to avoid lumps.
- Return to heat, cook, stirring until mixture has boiled and thickened. Stir in yoghurt and chopped parsley - reheat gently but do not allow to boil.
- Spoon the hot sauce over the vegetables and serve.
