Casablanca Salad
Ingredients
- 4 large tomatoes, peeled and diced
- 4 sweet green peppers, diced
- 1 green cucumber, peeled, seeds removed and diced
- 3 sticks celery, sliced finely
- 1 tablespoon chopped green chillies
- black pepper to taste
- 1 tablespoon lemon juice
- 2 tablespoons chopped parsley
- 1/4 teaspoon ground cumin
- 2 cloves garlic, finely chopped
- serves 4
Directions
- Combine all ingredients in a bowl, refrigerate at least one hour, sprinkle with finely chopped lemon peel before serving.
- Serve with grilled trim lamb or lamb kebabs.
