Casablanca Salad

Ingredients

  • 4 large tomatoes, peeled and diced
  • 4 sweet green peppers, diced
  • 1 green cucumber, peeled, seeds removed and diced
  • 3 sticks celery, sliced finely
  • 1 tablespoon chopped green chillies
  • black pepper to taste
  • 1 tablespoon lemon juice
  • 2 tablespoons chopped parsley
  • 1/4 teaspoon ground cumin
  • 2 cloves garlic, finely chopped
  • serves 4

Directions

  1. Combine all ingredients in a bowl, refrigerate at least one hour, sprinkle with finely chopped lemon peel before serving.
  2. Serve with grilled trim lamb or lamb kebabs.
