Creamy Tuna Pasta

Ingredients

  • 1 teaspoon poppy seeds
  • 50gms spinach
  • 1 small eggplant, cubed
  • 1 onion, finely chopped
  • 1 clove garlic, sliced
  • 1 quantity white sauce (see next recipe)
  • 200gms tuna in spring water
  • 1 teaspoon basil (fresh is best)
  • 350gms fettuccine, tagliatelle or other pasta.
  • serves 4

Directions

  1. Dry fry garlic, onion and eggplant until cooked.
  2. Make white sauce (see next recipe) and add onion, garlic, eggplant and spinach and cook on medium for 5 minutes or until spinach is cooked.
  3. Add salmon and heat through. Add basil.
  4. Cook pasta, drain and add poppy seeds. Add sauce and serve.
  5. Sprinkle with parmesan cheese. Garnish with fresh basil leaves.
