Creamy Tuna Pasta
Ingredients
- 1 teaspoon poppy seeds
- 50gms spinach
- 1 small eggplant, cubed
- 1 onion, finely chopped
- 1 clove garlic, sliced
- 1 quantity white sauce (see next recipe)
- 200gms tuna in spring water
- 1 teaspoon basil (fresh is best)
- 350gms fettuccine, tagliatelle or other pasta.
- serves 4
Directions
- Dry fry garlic, onion and eggplant until cooked.
- Make white sauce (see next recipe) and add onion, garlic, eggplant and spinach and cook on medium for 5 minutes or until spinach is cooked.
- Add salmon and heat through. Add basil.
- Cook pasta, drain and add poppy seeds. Add sauce and serve.
- Sprinkle with parmesan cheese. Garnish with fresh basil leaves.
