Spicy Marinara Sauce

Ingredients

  • 400gms marinara mix
  • 1 onion, finely chopped
  • 1 red capsicum, finely chopped
  • 1 clove garlic, finely chopped
  • 1 red chilli, finely chopped, seeds removed
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 440gms can peeled tomatoes, finely chopped
  • 3 teaspoons apple cider vinegar
  • serves 4

Directions

  1. Dry fry onion, garlic, capsicum and chilli in large pan. Add a little water to prevent burning, when onion is tender, add ground cumin and ground coriander.
  2. Add tomatoes and vinegar. Simmer for 30 minutes.
  3. Add marinara mix and simmer for 4 minutes, add fresh coriander and serve immediately over pasta.
