Cooking Polenta
Ingredients
- 8 cups water
- 1 teaspoon salt
- 3 ½ cups polenta (cornmeal)
- serves 4
Directions
- Place the water and salt into a large pan and bring it to the boil.
- Gradually sprinkle the polenta over the water, stirring constantly (make sure there are no lumps). Turn the heat down to low and continue to stir the polenta until the mixture is very thick (about 20 minutes). Leave the polenta over low heat for approximately 8 minutes, stirring occasionally. When the spoon can stand on it’s own, the mixture can be spooned into a lamington tin.
- Leave the tin to stand overnight in the refrigerator. The next day, turn out and cut into desired shapes or squares (you can use a cookie cutter to great effect!).
- To re-heat, simply place under the griller or on the BBQ or even the microwave oven. Polenta is then served in slices with fish or cut up into salads. All sauces recommended for pasta can also be served with polenta.
