Grilled Capsicum Sauce

Ingredients

  • 1 medium red capsicum
  • 1 clove garlic
  • 1/2 cup canned tomatoes
  • 1/2 teaspoon fresh oregano
  • 1 tablespoon capers
  • serves 4

Directions

  1. Grill capsicum until charred on all sides. Place in freezer bag, tie and sweat for 10 minutes. Cool. Peel capsicum under running water and chop.
  2. Dry fry garlic, add tomatoes and simmer for 5 minutes.
  3. Add capsicum, oregano and capers. Use also as a base for pizza.
