Cooking Pasta
Bring a large pot of water to the boil. It is not necessary to add salt or oil. A bay leaf in the water can add extra flavour. When the water is at a steady rolling boil, add the pasta and stir gently until the water returns to the boil. This stops the strands of pasta from sticking together. Cook to taste.
Most dry pastas take about twelve minutes to reach the ‘al dente’ chewiness that Italians prefer. Fresh ones may cook in less than a minute. This is one occasion when it is appro-priate to taste. Drain the pasta. There is no need to rinse. Serving Per Person: Allow 85gms of pasta per person.
