Veal Curry

Ingredients:

  • 1 large onion, finely chopped
  • 1 clove garlic, crushed
  • 1 teaspoon grated ginger
  • 1 dessert spoon mild curry powder
  • 2 teaspoons chopped fresh mint
  • 1 bay leaf
  • 500gm sliced veal
  • 1 zucchini
  • 1 cup chopped spinach
  • 1 can peeled tomatoes, crushed
  • 3 tablespoons low fat yoghurt or evaporated skim milk
  • serves 4

Directions:

  1. In a large fry pan, fry onion, garlic and ginger adding a little water if necessary to prevent sticking.
  2. Add meat, curry powder and bay leaf. Brown.
  3. Add tomatoes and liquid and simmer until meat is tender. Add zucchini and spinach.
  4. When vegetables are cooked, add yoghurt and mint, heat through and serve immediately.
  5. Serve with a large salad, or vegetables of choice.
