Veal Curry
Ingredients:
- 1 large onion, finely chopped
- 1 clove garlic, crushed
- 1 teaspoon grated ginger
- 1 dessert spoon mild curry powder
- 2 teaspoons chopped fresh mint
- 1 bay leaf
- 500gm sliced veal
- 1 zucchini
- 1 cup chopped spinach
- 1 can peeled tomatoes, crushed
- 3 tablespoons low fat yoghurt or evaporated skim milk
- serves 4
Directions:
- In a large fry pan, fry onion, garlic and ginger adding a little water if necessary to prevent sticking.
- Add meat, curry powder and bay leaf. Brown.
- Add tomatoes and liquid and simmer until meat is tender. Add zucchini and spinach.
- When vegetables are cooked, add yoghurt and mint, heat through and serve immediately.
- Serve with a large salad, or vegetables of choice.
