Thai Fish Cakes
Ingredients:
- 500gms fish
- 2 tablespoons fresh coriander
- 3 tablespoons fish sauce
- 2 spring onions
- 1 tablespoon curry paste
- 1 beaten egg
- juice of lemon
- few drops coconut essence
- serves 4
Directions:
- Line muffin tin with baking paper. Process all ingredients until fine and smooth and spoon into pans.
- Pour 1 cup water into wok & place patty pan into the wok. Steam with lid on until fish cakes are cooked.
- Serve with rice & stir fry vegetables.
