Thai Fish Cakes

Ingredients:

  • 500gms fish
  • 2 tablespoons fresh coriander
  • 3 tablespoons fish sauce
  • 2 spring onions
  • 1 tablespoon curry paste
  • 1 beaten egg
  • juice of lemon
  • few drops coconut essence
  • serves 4

Directions:

  1. Line muffin tin with baking paper. Process all ingredients until fine and smooth and spoon into pans.
  2. Pour 1 cup water into wok & place patty pan into the wok. Steam with lid on until fish cakes are cooked.
  3. Serve with rice & stir fry vegetables.
