Sweet and Sour Pork
Ingredients:
- 600gms pork fillet (veal can be substituted)
- 1 large onion
- 1 cup water
- 500gms green beans (sliced)
- 2 carrots (diced)
- 2 sticks celery (chopped)
- one 440gm tin of crushed pineapple (unsweetened)
- 1/4 cup vinegar
- 1 tablespoon light soya sauce
- 1 tablespoon cornflour
- 1/4 cup sugar
- serves 4-6
Directions:
- Brown pork and onions in a deep non-stick pan. Add water and simmer approximately 1 hour (or until pork is tender).
- Steam beans, carrot and celery. Drain pineapple and reserve juice.
- Mix together pineapple juice, vinegar, soya sauce, cornflour and sugar and add to meat. Cook slowly for further 10 minutes to thicken sauce.
Add vegetables and pineapple.
