Sweet and Sour Pork

Ingredients:

  • 600gms pork fillet (veal can be substituted)
  • 1 large onion
  • 1 cup water
  • 500gms green beans (sliced)
  • 2 carrots (diced)
  • 2 sticks celery (chopped)
  • one 440gm tin of crushed pineapple (unsweetened)
  • 1/4 cup vinegar
  • 1 tablespoon light soya sauce
  • 1 tablespoon cornflour
  • 1/4 cup sugar
  • serves 4-6

Directions:

  1. Brown pork and onions in a deep non-stick pan. Add water and simmer approximately 1 hour (or until pork is tender).
  2. Steam beans, carrot and celery. Drain pineapple and reserve juice.
  3. Mix together pineapple juice, vinegar, soya sauce, cornflour and sugar and add to meat. Cook slowly for further 10 minutes to thicken sauce.

Add vegetables and pineapple.
