Seafood Pancake

Ingredients:

  • 50gms tuna (or any flaked white fish) & 50gms prawns
  • 1 egg, 2 tablespoons flour
  • 2 tablespoons chopped onion
  • 1/2 teaspoon garlic- herb blend
  • serves 1

Directions:

  1. Beat egg until light and fluffy. Add flour and seasonings, stir well.
  2. Let stand for 20 minutes. Add tuna, prawns and onions, mix well.
  3. Heat a non-stick pan. Cook slowly for 7 minutes each side or until firm.
  4. Serve with fresh salad.
