Schnapper with Lemon & Ginger
Ingredients
- One whole (750gms) schnapper, cleaned and scaled (your fishmonger will do this for you)
- 1 tablespoon fresh, grated ginger
- 4 spring onions, sliced on diagonal
- finely julienned rind of one lemon
- 2 tablespoons sesame seeds
- 1 tablespoon light soya sauce
- 1 tablespoon dry sherry
- serves 4
Directions:
- Half fill electric fry pan or large wok with boiling water, add ginger. Lower heat and gently lower whole fish into pan. Simmer, covered for about 10 minutes.
- Heat soya sauce and sherry in a small pan.
- Place fish on heated platter, garnish with onions and lemon rind, pour over soya mixture and sprinkle with sesame seeds.
