Schnapper with Lemon & Ginger

Ingredients

  • One whole (750gms) schnapper, cleaned and scaled (your fishmonger will do this for you)
  • 1 tablespoon fresh, grated ginger
  • 4 spring onions, sliced on diagonal
  • finely julienned rind of one lemon
  • 2 tablespoons sesame seeds
  • 1 tablespoon light soya sauce
  • 1 tablespoon dry sherry
  • serves 4

Directions:

  1. Half fill electric fry pan or large wok with boiling water, add ginger. Lower heat and gently lower whole fish into pan. Simmer, covered for about 10 minutes.
  2. Heat soya sauce and sherry in a small pan.
  3. Place fish on heated platter, garnish with onions and lemon rind, pour over soya mixture and sprinkle with sesame seeds.
