Scallops with Honey and Dill

Ingredients:

  1. 400gms scallops
  2. Campbells fish stock

Mayonnaise:

  1. 1 cup non-fat yoghurt
  2. 1 teaspoon honey
  3. 1 teaspoon lemon juice
  4. 1 tablespoon chopped dill
  5. serves 4

Directions:

  1. Poach scallops gently in fish stock until cooked (do not overcook) and cool.
  2. Blend ingredients for mayonnaise until combined.
  3. Stir scallops into mayonnaise. Serve on a bed of watercress.
