Scallops with Honey and Dill
Ingredients:
- 400gms scallops
- Campbells fish stock
Mayonnaise:
- 1 cup non-fat yoghurt
- 1 teaspoon honey
- 1 teaspoon lemon juice
- 1 tablespoon chopped dill
- serves 4
Directions:
- Poach scallops gently in fish stock until cooked (do not overcook) and cool.
- Blend ingredients for mayonnaise until combined.
- Stir scallops into mayonnaise. Serve on a bed of watercress.
