Scallop Stir Fry
Ingredients:
- 400gms scallops (remove coral if desired)
- 1 onion, chopped
- 1 clove garlic, crushed
- 1 medium red capsicum, cut in slices
- 2 sticks celery, cut on the diagonal
- 1 small can water chestnuts, drained and sliced
- 100gms snow peas
- 1 tablespoon chilli sauce
- 1 tablespoon chopped fresh corriander
- serves 4
Directions:
- Dry fry onion and garlic (use a little water to prevent burning).
- Add remaining ingredients and stir fry until heated through.
- Serve with rice or pasta and a green salad.
