Silver Salmon & Vegetable Casserole
Ingredients:
- 2/3 cup cooked brown rice
- 1 teaspoon water
- 1 onion, chopped
- 1 carrot, chopped
- 1 stick celery
- 1 egg
- 1 tablespoon low salt tomato paste
- 90gms mushrooms, sliced
- 1 small red pepper, chopped
- 220gms can silver salmon
- 130gms whole kernel corn, drained
- 1 tablespoon chopped chives
- 1 tablespoon grated low fat tasty cheese or parmesan
- serves 4
Directions:
- Cook rice and set aside.
- Combine 1 teaspoon water, onion, carrot and celery in a dish, cover, cook on HIGH 5 minutes, add rice, lightly beaten egg, tomato paste, mushrooms, red pepper undrained silver salmon, corn and chives, mix until well combined.
- Sprinkle with cheese and cook on HIGH for 8 minutes.
