Silver Salmon & Vegetable Casserole

Ingredients:

  • 2/3 cup cooked brown rice
  • 1 teaspoon water
  • 1 onion, chopped
  • 1 carrot, chopped
  • 1 stick celery
  • 1 egg
  • 1 tablespoon low salt tomato paste
  • 90gms mushrooms, sliced
  • 1 small red pepper, chopped
  • 220gms can silver salmon
  • 130gms whole kernel corn, drained
  • 1 tablespoon chopped chives
  • 1 tablespoon grated low fat tasty cheese or parmesan
  • serves 4

Directions:

  1. Cook rice and set aside.
  2. Combine 1 teaspoon water, onion, carrot and celery in a dish, cover, cook on HIGH 5 minutes, add rice, lightly beaten egg, tomato paste, mushrooms, red pepper undrained silver salmon, corn and chives, mix until well combined.
  3. Sprinkle with cheese and cook on HIGH for 8 minutes.
