Prawn & Whiting Noisettes

Ingredients:

  • 50gms prawns, shelled or one can shrimps, drained
  • 250gms whiting fillets
  • 1/4 cup chopped shallots
  • 1/2 cup zucchini
  • 1 teaspoon lemon juice
  • 1 onion, chopped
  • water
  • skim milk
  • seasoning to taste
  • cornflour for thickening
  • serves 2

Directions:

  1. Blend prawns, zucchini, shallots, lemon juice, and seasonings in food processor until smooth.
  2. Divide prawn mixture and spreadover whiting fillets. Roll up and secure with toothpick.
  3. Place in oven dish and cover with equal parts water and skim milk. Add onion. Bake, covered at 180C until cooked through.
  4. Remove fish and keep warm. Combine cornflour with the stock. Bring to boil and stir until sauce thickens.
  5. Serve fish with sauce, garnish with lemon and sprigs of dill. Serve with salad or vegetables.
