Prawn & Whiting Noisettes
Ingredients:
- 50gms prawns, shelled or one can shrimps, drained
- 250gms whiting fillets
- 1/4 cup chopped shallots
- 1/2 cup zucchini
- 1 teaspoon lemon juice
- 1 onion, chopped
- water
- skim milk
- seasoning to taste
- cornflour for thickening
- serves 2
Directions:
- Blend prawns, zucchini, shallots, lemon juice, and seasonings in food processor until smooth.
- Divide prawn mixture and spreadover whiting fillets. Roll up and secure with toothpick.
- Place in oven dish and cover with equal parts water and skim milk. Add onion. Bake, covered at 180C until cooked through.
- Remove fish and keep warm. Combine cornflour with the stock. Bring to boil and stir until sauce thickens.
- Serve fish with sauce, garnish with lemon and sprigs of dill. Serve with salad or vegetables.
