Oriental Chicken Salad

Ingredients:

  • 480gms chicken breast, cut into thin strips
  • 1/2 teaspoon toasted sesame seeds
  • 1 teaspoon grated ginger
  • 2 cups shredded lettuce
  • 1/2 cup spring onions, cut on diagonal
  • 2 tablespoons chopped parsley
  • 2 tablespoons chopped fresh cardamom
  • 1 can water chestnuts, sliced and drained
  • 1/2 cup finely sliced red capsicum

Marinade:

  • 1 can pineapple chunks, reserve juice for marinade
  • 1 tablespoon light soy sauce
  • 1 teaspoon Dijon mustard
  • 1 teaspoon lemon juice
  • dash 5 spice powder
  • serves 4

Directions:

  1. Marinade chicken overnight (can marinade for less time, if in a hurry!).
  2. Dry fry chicken, sesame seeds and ginger in wok until lightly browned. Add remaining marinade. Allow to cool to room temperature.
  3. To serve, place lettuce in large bowl, spoon chicken onto lettuce and add pineapple chunks, green onions, water chestnuts and red pepper. Sprinkle with parsley and cardamom.
