Oriental Chicken Salad
Ingredients:
- 480gms chicken breast, cut into thin strips
- 1/2 teaspoon toasted sesame seeds
- 1 teaspoon grated ginger
- 2 cups shredded lettuce
- 1/2 cup spring onions, cut on diagonal
- 2 tablespoons chopped parsley
- 2 tablespoons chopped fresh cardamom
- 1 can water chestnuts, sliced and drained
- 1/2 cup finely sliced red capsicum
Marinade:
- 1 can pineapple chunks, reserve juice for marinade
- 1 tablespoon light soy sauce
- 1 teaspoon Dijon mustard
- 1 teaspoon lemon juice
- dash 5 spice powder
- serves 4
Directions:
- Marinade chicken overnight (can marinade for less time, if in a hurry!).
- Dry fry chicken, sesame seeds and ginger in wok until lightly browned. Add remaining marinade. Allow to cool to room temperature.
- To serve, place lettuce in large bowl, spoon chicken onto lettuce and add pineapple chunks, green onions, water chestnuts and red pepper. Sprinkle with parsley and cardamom.
