Orange Fish Parcels
Ingredients:
- 4 white fish fillets, skin and bones removed
- 1 teaspoon grated orange rind
- 1/4 cup freshly squeezed orange juice
- 1 teaspoon chopped fresh dill
- 1 tablespoon chopped fresh chives
- 1/2 teaspoon light soy sauce
- serves 4
Directions:
- Cut out 4 x 30cm square pieces of foil and spray with olive oil. Place one fish fillet in centre of each square.
- Combine orange rind, orange juice, dill, chives and soy sauce. Sprinkle mixture over fillets.
- Wrap up and bake parcels on oven tray in moderate oven for 15 minutes. Serve in foil.
