Orange Fish Parcels

Ingredients:

  • 4 white fish fillets, skin and bones removed
  • 1 teaspoon grated orange rind
  • 1/4 cup freshly squeezed orange juice
  • 1 teaspoon chopped fresh dill
  • 1 tablespoon chopped fresh chives
  • 1/2 teaspoon light soy sauce
  • serves 4

Directions:

  1. Cut out 4 x 30cm square pieces of foil and spray with olive oil. Place one fish fillet in centre of each square.
  2. Combine orange rind, orange juice, dill, chives and soy sauce. Sprinkle mixture over fillets.
  3. Wrap up and bake parcels on oven tray in moderate oven for 15 minutes. Serve in foil.
