Beef & Mushroom Casserole

Ingredients:

  • 200gms chuck steak
  • 1 tablespoon plain flour
  • 1/2 cup water
  • 100gms baby mushrooms
  • 100gms baby onions
  • 1 tablespoon apple cider vinegar
  • 1 cup water, extra
  • 1 tablespoon no added salt
  • tomato paste
  • 1 bay leaf
  • serves 2

Directions:

(Recipe can be made a day ahead)

  1. Remove all visible fat from steak, cut into bite size pieces. Toss steak in flour.
  2. Heat water in pan, stir in steak, cook for 3 minutes, stir in remaining ingredients.
  3. Bring to boil simmer, covered for approximately 1 1/2 hours or until meat is tender. Remove bay leaf before serving.
