Moroccan Chicken Kebabs

Ingredients:

  • 400gms chicken fillet
  • red capsicum
  • button mushrooms
  • Marinade:
  • 1 cup non fat yoghurt
  • 2 teaspoons turmeric
  • 1 teaspoon cumin
  • 1 teaspoon fresh grated ginger
  • 2 cloves garlic, crushed
  • 1/2 teaspoon nutmeg
  • serves 4

Directions:

  1. Cut chicken in bite size pieces and marinade, allow to stand one hour.
  2. Thread chicken onto skewers, alternating with capsicum and mushrooms.
  3. Brush with marinade and grill on BBQ or under griller for 5 minutes on each side.
  4. Serve with yellow squash and large salad.
