Moroccan Chicken Kebabs
Ingredients:
- 400gms chicken fillet
- red capsicum
- button mushrooms
- Marinade:
- 1 cup non fat yoghurt
- 2 teaspoons turmeric
- 1 teaspoon cumin
- 1 teaspoon fresh grated ginger
- 2 cloves garlic, crushed
- 1/2 teaspoon nutmeg
- serves 4
Directions:
- Cut chicken in bite size pieces and marinade, allow to stand one hour.
- Thread chicken onto skewers, alternating with capsicum and mushrooms.
- Brush with marinade and grill on BBQ or under griller for 5 minutes on each side.
- Serve with yellow squash and large salad.
