Mediterranean Fish Fillets

Ingredients:

  • 4 x 100gms boneless white fish fillets
  • Crumbs:
  • 2 slices stale bread, crumbed
  • 2 tablespoons chopped parsley
  • 1 egg, lightly beaten

Sauce:

  • 3 large ripe tomatoes
  • 1 clove garlic, finely chopped
  • 1 tablespoon apple cider vinegar
  • 1 bay leaf
  • 2 teaspoons lemon juice
  • 2 tablespoons snipped chives
  • serves 4

Directions:

  1. Combine the breadcrumbs, chives and parsley. Brush the fillets with a little egg and press into prepared crumbs.
  2. Place the fish on a baking tray lightly sprayed with olive oil. Bake for 15-20 minutes, or until cooked, turning once during cooking.
  3. Cut a cross on the bottom of each tomato, drop into boiling water for 1-2 minutes. Remove from water, cool slightly. Peel away the skins and chop finely.
  4. Dry fry onion and garlic for 5-7 minutes. Add the apple cider vinegar, tomatoes, water, bay leaf and basil. Simmer gently for 8-10 minutes. Remove from heat and stir in the olive oil, pepper and lemon juice.
  5. Spoon the sauce onto the base of the serving plates and place the fish on top. Serve warm.
