Mediterranean Fish Fillets
Ingredients:
- 4 x 100gms boneless white fish fillets
- Crumbs:
- 2 slices stale bread, crumbed
- 2 tablespoons chopped parsley
- 1 egg, lightly beaten
Sauce:
- 3 large ripe tomatoes
- 1 clove garlic, finely chopped
- 1 tablespoon apple cider vinegar
- 1 bay leaf
- 2 teaspoons lemon juice
- 2 tablespoons snipped chives
- serves 4
Directions:
- Combine the breadcrumbs, chives and parsley. Brush the fillets with a little egg and press into prepared crumbs.
- Place the fish on a baking tray lightly sprayed with olive oil. Bake for 15-20 minutes, or until cooked, turning once during cooking.
- Cut a cross on the bottom of each tomato, drop into boiling water for 1-2 minutes. Remove from water, cool slightly. Peel away the skins and chop finely.
- Dry fry onion and garlic for 5-7 minutes. Add the apple cider vinegar, tomatoes, water, bay leaf and basil. Simmer gently for 8-10 minutes. Remove from heat and stir in the olive oil, pepper and lemon juice.
- Spoon the sauce onto the base of the serving plates and place the fish on top. Serve warm.
