Lime and Chilli Prawns with Rice

Ingredients:

  • 1 tablespoon grated ginger
  • 2 spanish onions, halved and sliced lengthwise
  • 800gm medium green prawns, peeled and deveined, leaving tail intact
  • 1/4 cup lime juice
  • 1 tablespoon fish sauce
  • 2 tablespoons sweet chilli sauce
  • 1/3 cup chopped coriander
  • 1/3 cup chopped Thai basil
  • 2 kaffir-lime leaves thinly sliced
  • 150gm snow peas, halved
  • steamed rice to serve
  • serves 4

Directions:

  1. Heat wok, add ginger and onion and stir fry over high heat for one minute.
  2. Add prawns and stir fry for two minutes, then add lime juice, sauces, herbs, lime leaves and snow peas and cook a further two minutes.
  3. Serve on a bed of steamed rice.
