Lime and Chilli Prawns with Rice
Ingredients:
- 1 tablespoon grated ginger
- 2 spanish onions, halved and sliced lengthwise
- 800gm medium green prawns, peeled and deveined, leaving tail intact
- 1/4 cup lime juice
- 1 tablespoon fish sauce
- 2 tablespoons sweet chilli sauce
- 1/3 cup chopped coriander
- 1/3 cup chopped Thai basil
- 2 kaffir-lime leaves thinly sliced
- 150gm snow peas, halved
- steamed rice to serve
- serves 4
Directions:
- Heat wok, add ginger and onion and stir fry over high heat for one minute.
- Add prawns and stir fry for two minutes, then add lime juice, sauces, herbs, lime leaves and snow peas and cook a further two minutes.
- Serve on a bed of steamed rice.
