Herbed Fish
Ingredients:
- 4 fish cutlets
- 1 teaspoon water
- 1 green pepper, sliced
- 2 tablespoons lemon juice
- 1 onion, sliced
- 2 tablespoons water
- 2 tomatoes peeled and sliced
- 1/4 cup apple cider vinegar
- 1 teaspoon dried tarragon leaves
- 1 tablespoon chopped chives
- 3 teaspoons cornflour
- serves 4
Directions:
(Be careful of steam when opening bag)
- Combine water, onion, tomatoes and pepper in oven bag, twist end, tuck end underneath.
- Cook on HIGH for 5 minutes. Place fish on top of vegetables in bag, sprinkle with lemon juice, wine tarragon and chives, twist end and tuck underneath. Cook on HIGH for 5 minutes.
- Pour juices carefully into a small bowl, (leave fish, etc in bag to keep warm) stir in blended cornflour and water, cook on HIGH 2 minutes, or until sauce boils and thickens.
- Place vegetables and fish on plate, top with sauce. Serve with green salad.
