Herbed Fish

Ingredients:

  • 4 fish cutlets
  • 1 teaspoon water
  • 1 green pepper, sliced
  • 2 tablespoons lemon juice
  • 1 onion, sliced
  • 2 tablespoons water
  • 2 tomatoes peeled and sliced
  • 1/4 cup apple cider vinegar
  • 1 teaspoon dried tarragon leaves
  • 1 tablespoon chopped chives
  • 3 teaspoons cornflour
  • serves 4

Directions:

(Be careful of steam when opening bag)

  1. Combine water, onion, tomatoes and pepper in oven bag, twist end, tuck end underneath.
  2. Cook on HIGH for 5 minutes. Place fish on top of vegetables in bag, sprinkle with lemon juice, wine tarragon and chives, twist end and tuck underneath. Cook on HIGH for 5 minutes.
  3. Pour juices carefully into a small bowl, (leave fish, etc in bag to keep warm) stir in blended cornflour and water, cook on HIGH 2 minutes, or until sauce boils and thickens.
  4. Place vegetables and fish on plate, top with sauce. Serve with green salad.
