The Traditional Roast: The Healthy Way

Ingredients:

  • 1 roast of your choice (lamb, beef or veal) fat trimmed
  • 1/2 cup water
  • garlic
  • herbs and spices of choice (eg rosemary)
  • vegetables of choice
  • serves 4-6

Directions:

  1. Place fat-trimmed meat (lamb, beef, veal) on a rack in oven-proof dish.
  2. Pour 1/2 cup water into base of pan. Rub roast with garlic, sprinkle with herbs and spices as desired, bake as usual, basting with juices from time to time.
  3. Place vegetables of choice on a shallow oven tray. Brush vegetables with skim milk. Sprinkle with herbs, spices as desired. Bake until tender, but still crisp.
  4. When roast is done, pour off juices into a bowl and place in freezer for 5 minutes. Skim off fat and thicken with cornflour for a delicious, low-fat gravy.
