Greek Lamb Fillet

Ingredients:

  • 480gms lamb fillet (in one piece)
  • 1 tablespoon lemon juice
  • 1 teaspoon crushed fresh rosemary
  • 1/4 teaspoon cracked black pepper
  • 1/4 teaspoon cracked pink peppercorns
  • 1/2 teaspoon grated lemon rind
  • 1 clove garlic
  • serves 4

Directions:

  1. Crush garlic, rosemary, peppers, lemon rind and lemon juice to form a paste.
  2. Grill lamb fillet till browned, turn over and spread with paste. Grill for 5 minutes.
  3. Slice fillet and serve with vegetables and a large salad.
