Greek Lamb Fillet
Ingredients:
- 480gms lamb fillet (in one piece)
- 1 tablespoon lemon juice
- 1 teaspoon crushed fresh rosemary
- 1/4 teaspoon cracked black pepper
- 1/4 teaspoon cracked pink peppercorns
- 1/2 teaspoon grated lemon rind
- 1 clove garlic
- serves 4
Directions:
- Crush garlic, rosemary, peppers, lemon rind and lemon juice to form a paste.
- Grill lamb fillet till browned, turn over and spread with paste. Grill for 5 minutes.
- Slice fillet and serve with vegetables and a large salad.
