Fish with Bok Choy & Orange

Ingredients:

  • 500gms white fish fillets, sliced in strips
  • 1 tablespoon plain flour
  • 1 teaspoon orange rind, cut in fine strips
  • 1 cup orange juice
  • 6-8 spring onions, cut on diagonal
  • 1 tablespoon light soy sauce
  • 2 teaspoons grated fresh ginger
  • 1 bunch bok choy
  • 2 tablespoons water
  • 4 cups hot cooked rice
  • serves 4

Directions:

  1. Place fish strips and flour in plastic bag, toss gently to coat with flour.
  2. Combine orange juice, rind, shallots, soy sauce and ginger in small bowl. Spray wok with olive oil and gently brown fish, remove from pan. Keep warm.
  3. Add chopped bok choy to wok and cook gently, stir in orange juice mixture and bring to boil. Pack cooked rice into cup and turn out onto 4 warm serving plates.
  4. Divide fish evenly into 4 serves. Top fish with orange and Bok Choy sauce, garnish with coriander.
