Fish with Bok Choy & Orange
Ingredients:
- 500gms white fish fillets, sliced in strips
- 1 tablespoon plain flour
- 1 teaspoon orange rind, cut in fine strips
- 1 cup orange juice
- 6-8 spring onions, cut on diagonal
- 1 tablespoon light soy sauce
- 2 teaspoons grated fresh ginger
- 1 bunch bok choy
- 2 tablespoons water
- 4 cups hot cooked rice
- serves 4
Directions:
- Place fish strips and flour in plastic bag, toss gently to coat with flour.
- Combine orange juice, rind, shallots, soy sauce and ginger in small bowl. Spray wok with olive oil and gently brown fish, remove from pan. Keep warm.
- Add chopped bok choy to wok and cook gently, stir in orange juice mixture and bring to boil. Pack cooked rice into cup and turn out onto 4 warm serving plates.
- Divide fish evenly into 4 serves. Top fish with orange and Bok Choy sauce, garnish with coriander.
